Spiced Almonds

From May 2, 2009:  I have been in a cooking rut lately.  I’m so busy, tired, and stressed out that I have not been cooking much of anything and certainly not anything new.  Now that school is wrapping down, I am looking forward to getting back into cooking .  I think my hubby is looking forward to that too. 🙂  In an effort to get back on track, I made these spiced almonds this morning.  Great for snacking or for adding to salads.  Try this recipe with other nuts or a combination of nuts for something different.

Spiced Almonds

1 tablespoon canola oil
1/4 teaspoon curry powder
1/2 teaspoon chile powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/8 teaspoon ground cayenne pepper
1 to 1 1/2 cups raw almonds
3 teaspoons sugar
3/4 teaspoon Kosher salt

Preheat oven to 300 degrees.  Heat the oil in a small skillet over medium heat.  Add the spices and stir until fragrant, about 1 minute.  Add the almonds, sugar, and salt.  Mix to coat the almonds and then spread the nuts on a baking sheet.  Bake, stirring occasionally for 20 minutes.  Serve warm or cooled.  Store in an airtight container.
